Thanksgiving Time

Thanksgiving is almost here, and what we all love at thanksgiving is FOOD. Here are 3 easy recipes.

 

1 Mashed potatoes

Prep time: 25 minutes. Total: 45 minutes. Ingredients: 5. Servings: 10.

8 to 10 medium russet potatoes (about 3 lb.) peeled, cut into quarters

1 teaspoon salt

2 tablespoons butter

Dash pepper (if wanted)

1/4 cup HOT  milk

Steps

  1. Place potatoes in large saucepan; add enough water to cover. Add 3/4 teaspoon of salt. Bring to a boil. Reduce heat to medium-low; cover loosely and boil gently for 15 to 20 minutes or until potatoes break apart easily when pierced with a fork. Drain well.
  2. Return potatoes to saucepan gently over low heat for 1 to 2 minutes to evaporate any excess moisture.
  3. Mash potatoes with potatoes masher until no lumps remain. Add butter, pepper, and remaining 1/4 teaspoon salt; continue mashing, gradually adding enough milk to make potatoes smooth and creamy.

 

2 Green Beans

Ingredients

1 pound fresh green beans, trimmed and snapped in half

3 tablespoons butter

3 cloves garlic, minced

2 pinches lemon pepper

Salt to taste

How to make them

  1. Place green beans into  a large skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes. Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.
  2. Cook and stir garlic with green beans until garlic is tender and fragrant, 3 to 4 minutes. Season with lemon pepper and salt.

 

Mac and Cheese

Ingredients

8 ounces uncooked elbow macaroni

2 cups shredded sharp Cheddar cheese

1/2 cup grated Parmesan cheese

3 cups milk

1/4 cup butter

2 1/2 tablespoon all-purpose flour

2 tablespoons butter

1/2 cup bread crumbs

1 pinch paprika

Preparation

  1. Cook macaroni according to the package directions. Drain.
  2. In saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
  3. Melt butter or margarine in a skillet over medium heat. Add bread crumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
  4. Bake at 350 degrees F (150 C) for 30 minutes. Serve.
